CROCKPOT APPLE CINNAMON OATMEAL
 2 apples, cut into 1/2-inch pieces
1-1/2 cups skim milk
1-1/2 cups water
1 cup uncooked steel-cut oats
2 tablespoons brown sugar
1-1/2 tablespoons butter, cut into 5-6 pieces
1/2 teaspoon cinnamon
1 tablespoon ground flax seed
1/4 teaspoon salt

Cook on low overnight for 7 hours
I doubled the recipe and it made around 12 servings. I stirred it up about an hour before it was done cooking, added another cup of milk to make it creamier and also topped mine with another tblspn of brown sugar.

All in all, it was somewhere around:
Calories: 170
Protein: 6g
Fat: 3g
 Sugar: 10g



I haven't posted what I've been eating lately. Why??? Because life got in the way and we now call Taco Bueno our second home.

But here's a fun new recipe that will last you for days, tasty, filling and good for you, of course.

STUFFED SHELLS WITH SPINACH & GROUND TURKEY

I got this one off skinnytaste.com, portioned it out for the week and it tastes even better reheated. Great for a week when mom is flying solo and doesn't have time to cook dinner or make her lunch every day. Prep is a little messy and time consuming but then you have 30 shells to work with!


If only my kitchen didn't end up like this afterward.

Try this new recipe for
CROCK POT LASAGNA

What you need:
1 lb of meat
(I used ground buffalo, could use anything! Ground turkey would be tasty, or italian sausage if you like some spice)
 1 1/2 - 2 jars of tomato sauce, I used the no sugar added ragu
1 large zuccini or more, or any veggie you can think to add
8oz uncooked regular old lasagna noodles
2 cups low fat cottage cheese
2 cups shredded mozzerella

Brown the meat and mix with a jar of sauce.
Mix the cottage and shredded cheese together.
Layer half of meat sauce, then half the noodles, half the veggies, half the cheese mixture and repeat
throw a half a jar (or whole jar) of tomato sauce over top.

Serves 6 very large servings!

Protein: 37g
Fat: 16g
(you could adjust the cheese and meat to lower the fat)

I make this breakfast casserole almost every week. It's simple to make, easy to re-heat and eat at my desk every morning, and loaded with good stuff! Who needs Wheaties when you've got this?

Egg Casserole

3 eggs
4 egg whites
1/3 cup of shredded mozzerella
1/3 cup shredded cheddar
1/2 cup low fat cottage cheese
3 tablespoons of flour
Spinach (I use frozen chopped spinach, defrosted in the microwave)
Any other tasty veggies, this week I used some leftover broccoli
 Bake at 350 for an hour
Serves 4

Do you use a crock-pot? I have just recently become a fan. But there is nothing fancy about it at my house. I keep it simple, usually 3 ingredients:
Frozen meat, 99% of the time that is chicken
Some sort of frozen veggie
Whatever dressing or marinade I can find

Today it was a peanut dressing from Trader Joe's along with some green beans and frozen chicken tenderloins. 6 hours on low=dinner for the 4 of us plus enough leftover for lunch tomorrow!



 The week ahead is going to be a tough one. Lots to do, traveling husband, long days at work. That usually means I will end up too lazy to pack a lunch or make dinner and we will eat out, which adds up in calories and dollars! So I stock up on my new fav, Lean Cuisine Steamers. They are under 300 calories so I add a side of fruit or vegetable and I am all set. Plus, they are just under $4 and there is always a $1 coupon in the paper for a purchase of 3 or more!




If I can steal 5 minutes in the morning my favorite breakfast is a scramble of:
3 eggs whites
1 egg
whatever veggies I can find in the fridge
shredded cheese


I keep track of most of what I eat in an app on my iPhone, there are tons out there to choose from. I like the ones that let you scan an items bar code. I'm not overly obsessed with counting calories but I do know that if I don't pay attention to what goes in, my waist will go out. It also helps me make better decisions when I'm out to eat. You can type in the options you are considering and see what kind of damage you are going to do (like should I have the dilly bar or the pumpkin spice blizzard???)

This morning its leftover tomatoes from taco night and some chopped broccoli, tossed in a little shredded mozzarella and it becomes a breakfast of champions. And if its been "one of those mornings..." then I throw in a side of iced skinny vanilla latte!


Note: if you don't often have any veggie leftovers, I love to keep a bag of frozen chopped spinach in the freezer, makes a simple add-in!

I am always curious as to what other people are eating and how or if they are keeping track. I love new ideas, healthy new recipes and above all, ones that are simple and can be made in a hurry! So I figured, why not have a place where I can share with you what's on my plate and also the plates of all my good friends!
